JK was dead, literally it was. I received so many complaints about my silence and it is so encouraging to see my fans are still relying on me.. To add on to this, getting a new fan while you are totally out from operations is an auspicious moment to resume blogging .. Thanks Rumesh for the inspiration.. I had to steal his FB post.. The dish today is ideal for your lunch. It is simple, healthy, delicious and cheap to make..
What you need..
- White cowpea (boiled) – 50g
- One egg
- Sprats
- and usual herbs and spices
How you make it..
You know that JK loves to use leftover food. We always aspire a greener earth where minimal amount of food is wasted and more hungry mouths are fed! This time around, we used leftover cowpea from the breakfast. They were sort of over cooked, perfect for this recipe!
Clean sprats thoroughly and stir fry it in a shallow pan. Use a little coconut oil. Add plenty of cinnamon (This is where all the aroma comes from). Keep it ready to add to the mix!
Put 1/2 teaspoon of coconut oil into the pan. Add a chopped onion and wait till it gets golden. Break an egg (or two) to the pan. Add pepper, curry leaves, salt and few green chilly. Now its time to add the cowpea and cooked sprats. Let it cook for about 5 mins in medium heat.
