The dish today is ideal for you lunch. It is simple, healthy, delicious and cheap to make..
What you need..
- White cowpea (boiled) – 50g
- One egg
- and usual herbs and spices
How you make it..
You know that JK love to use leftover food. We always aspire a greener earth where minimal amount of food is wasted and more hungry mouths are fed! This time around, we used leftover cowpea from the breakfast. They were sort of over cooked, perfect for this recipe!
Clean sprat thoroughly and stir fry it in a shallow pan. Use a little coconut oil. Add plenty of cinnamon (This is where all the aroma comes from). Keep it ready to add to the mix!
Put 1/2 teaspoon of coconut oil to the pan. Add an chopped onion and let it get golden. Break an egg (or two) to the pan. Add pepper, curry leaves, salt and few green chilly. Now its time to add the cowpea and cooked sprat. Let it cook for about 5 mins in medium heat.
